  • Salt, 1 tablespoon
  • Ginger, 2 slices

  • Sauce Mixture:
  • Salt, 1 tablespoon
  • Light Soy Sauce (Reduced Salt), 2 tablespoons
  • Sichuan Pepper Oil, 2 tablespoons
  • Oyster Sauce, 2 tablespoons
  • Chinkiang Vinegar, 2 tablespoons
  • Cool Boiled Water, 250ml
  • White Sugar, 1 tablespoon
Instructions:
  1. Clean the Crucian carp thoroughly, removing scales and the black membrane in the belly. Make three shallow cuts on each side of the fish. Marinate with cooking wine and salt for 10 minutes.
  2. Stuff the fish belly with ginger slices and green onion leaves. Steam over medium heat for 8 minutes. Discard any excess water from the plate after steaming.
  3. Slice the green and red millet chillies into thin circles, mince the garlic, and chop the green onions and cilantro (reserving half of each for later). Prepare the sauce by mixing salt, light soy sauce, oyster sauce, white sugar, Chinkiang vinegar, Sichuan pepper oil, and cool boiled water. Stir well.
