Stir-Fried Tripe

  • 4 pounds tripe
  • A handful of dried chili peppers
  • A handful of Sichuan peppercorns
  • 1 piece of cinnamon stick
  • 2 star anises
  • 3 bay leaves
  • 2-3 slices of ginger
  • Shaoxing wine, as needed
  • 2 teaspoons salt
  • 2-3 slices of fresh ginger
  • 2-3 cloves of garlic
  • 2 shallots
  • 1 stalk of garlic sprout (optional)
  • 2 wrinkled green peppers
  • 2 bell peppers
  • Light soy sauce, as needed
  • Salt, as needed
  • A pinch of sugar
  • A pinch of MSG (optional)
Instructions:
  1. Clean the tripe thoroughly, removing any fat. Cut it into large pieces, blanch in boiling water with Shaoxing wine, and then rinse off any scum.
  2. Clean the spices (chili, Sichuan peppercorns, cinnamon, star anise, bay leaves) and put them in a spice bag.
  3. Place the prepared tripe, ginger slices, and spice bag in a pressure cooker. Add enough water to cover the tripe, along with 2 teaspoons of salt. After bringing to a boil, cook on low heat for 25 minutes.
  4. Check if the tripe is tender enough to be pierced easily with chopsticks. If so, it's ready for further processing, like stir-frying or serving cold. Optionally, let it soak for 1-2 hours to enhance the flavors.
  5. If not consuming immediately, store the cooked tripe in the freezer. Thaw before use. Cut the tripe into strips for stir-frying.
  6. Chop the green peppers, bell peppers, ginger, garlic, and shallots (and garlic sprouts if using). Heat oil in a wok, stir-fry these ingredients except the tripe to release their aroma. Then add the tripe and stir-fry together.
