Rock Cakes/Buns Directions Combine flour, Grace Coconut Milk Powder, baking powder and nutmeg and mix for even distribution. Add Grace Prima Margarine and use a dough blender or your finger tips to gently rub the margarine into dry mixture until it resembles fine breadcrumbs. Mix in the dark sugar and soaked raisins using a wooden spoon.
How to bake rock cakes?
Sprinkle with demerara sugar, if using. Bake in the preheated oven for 15 minutes or until golden brown and well risen. The rock cakes should be firm to the touch. Enjoy! Dried cranberries make a good addition, as do a few chopped nuts, a teaspoon of honey, or some chocolate chips.
