Huta Zi (Chinese Zucchini Pancakes)
Ingredients:
- Zucchini, 1 piece
- Eggs, 2
- Water, as needed
- Salt, to taste
- Wheat Flour, as needed
- Corn Flour, as needed
Instructions:
- Prepare all the ingredients.
- Grate the zucchini and add salt to draw out the water.
- Squeeze the zucchini by hand to remove excess water.
- Beat the eggs and mix them evenly with the zucchini.
- Add wheat and corn flour to the mixture, and mix well. Add water as needed to adjust consistency.
- Adjust the water content according to taste; more water will result in a longer cooking time. It gets easier with practice to find the right balance.
- Heat oil in a pan over medium heat, pour the batter and spread it evenly. Cover and cook for about 5-6 minutes, then flip over. Adjust cooking time and heat for desired softness.
