Scallion Oil Pan-Fried Cod

Notes

Ingredients:
  • Cod: 2 pieces
  • White wine, salt, spring onions, ginger, garlic, MSG, pepper powder, sesame oil: to taste
  • Cornstarch: as needed
  • Cooking oil: as needed
  • Steamed fish soy sauce: 1 spoonful
  • Garlic: 2 cloves
  • White pepper powder: a pinch
Instructions:
  1. Thaw the cod and gently rinse it. Use kitchen towels to dry the cod.
  2. Lightly pat the cod with a little salt and white pepper powder.
  3. Mix spring onions and ginger in the white wine and squeeze out the juice. Apply this marinade to both sides of the cod and let it marinate for 15 minutes. Then, discard the marinade and coat the cod with cornstarch.
  4. Heat a flat pan and fry the small pieces of spring onions and garlic slices until fragrant.
  5. Turn the heat to low and add the cod, frying each side for 5-6 minutes. Turn the cod very gently.
  6. Fry the side with the skin on.
  7. Once cooked, garnish with spring onion strips and a bit of steamed fish soy sauce. Serve hot, enjoying the crispy skin and tender, juicy flesh, infused with the subtle flavors of garlic, spring onion, and soy sauce.
