French Potato Soup
Ingredients:
- Pancetta, 1 pack (200g)
- Unsalted butter, 1 block
- Onion (diced), ½
- All-purpose flour, 42g
- Potatoes, 2
- Chicken broth, as needed
- Yogurt, 100g
- Whole milk, 500ml
- Garlic cloves, 3-4
- Light cream, 200g
- Black pepper powder, 1 spoon
- Salt, ½ spoon
- Paprika, a pinch
- Spring onion, for garnish
Instructions:
- Cut the pancetta into cubes and fry in a pan until golden and crispy. Set aside. Melt the butter in the same pan.
- Add diced onion and minced garlic, then stir in the flour until smooth.
- Add potato cubes, chicken broth, milk, and light cream.
- Add salt, black pepper, and paprika. Cover and simmer on low heat for 30 minutes. Stir occasionally until slightly thickened.
- Add yogurt and pancetta cubes, mix well and cook for another 15 minutes. Serve in bowls, topped with pancetta and spring onion.
- Note: Potatoes are rich in starch and protein and can aid in digestion. Different cooking methods offer varying textures and flavors.
