Suanzaixiaomian (Mixed Bean Noodles)
Ingredients:
- 100g Peas
- Homemade fried sauce, to taste
- 3 Green onions
- Sesame paste, to taste
- Salt, chicken essence, Sichuan pepper powder, to taste
- Tailai chicken sauce, to taste
- 5 cloves of Garlic
- Spicy noodles, to taste
Instructions:
- Soak the peas overnight. Cook with ginger slices, coarse salt, and equal parts water in a pressure cooker for 15 minutes. Optionally, simmer on the stove for a richer flavor.
- Mince garlic and mix with a bit of water. Chop green onions and pickled mustard tuber. Optionally, chop cilantro.
- Adjust the seasoning with spicy noodles, green onions, salt, chicken essence, Sichuan pepper powder, and sugar for enhanced flavor. Heat oil and pour over to release the aroma.
- Add garlic water, chopped pickled mustard tuber, a spoon of soy sauce, sesame paste, and chicken sauce with three spoons of water. Mix well.
- Boil the noodles until cooked, cool them under running water, and then mix with the prepared sauce. Add cooked peas and fried sauce, mix well, and serve.
