Morel, Chinese Yam, and Lean Pork Soup
Ingredients:
- 4-6 Morels
- 1 Chinese Yam
- Lean Pork (or Pork Bones), as needed
- 3 Figs
- A small handful of Lotus Seeds
- 4-5 slices of Ginger
- Salt, to taste
- 1-2 Red Dates
- A small handful of Goji Berries
Instructions:
- Prepare the ingredients. Peel the Chinese yam (use gloves to avoid itching). You can use lean pork, ribs, or a combination of both.
- Place the pork in cold water with a few slices of ginger, bring to a boil to remove impurities, then rinse the meat clean.
- Clean the morels thoroughly and soak them briefly; use the soaking water in the soup for extra flavor.
- Put all the ingredients, including the morels, Chinese yam, pork, figs, lotus seeds, and red dates (pitted), into a stew pot. Add water.
- Cook using the soup setting if using a stew pot. Alternatively, bring to a boil in a soup pot and then simmer for 30 minutes to an hour. Be careful not to overcook, as the Chinese yam can become too soft.
- Before serving, add a small amount of goji berries and season with salt to taste.
