Chicken Juice Soft Noodle Three-Delight Pie
Ingredients:
- 300 grams of flour
- A small bunch of chives
- Salt, chicken juice, cooking wine - as needed
- Two tablespoons of light soy sauce
- 150 grams of pork belly (three taels)
- 2 eggs
- 6 shrimps
Instructions:
- Mix flour with a little salt, one egg, and about 70% of the water quantity to create a thick batter. Cover and let it rest for an hour.
- Prepare the filling: Devein shrimps and cut into segments, chop chives, scramble the eggs with pork, and place in a bowl. Add three tablespoons of cooking oil, a pinch of salt, two tablespoons of light soy sauce, a tablespoon of chicken juice, and a tablespoon of cooking wine. Mix well.
- After the dough has rested, sprinkle some dry flour on a board. Stir the batter in one direction with chopsticks and spread it on the floured board. Shape it with a spatula.
- Cut the dough into pieces, add the filling, and shape the pies in your preferred style.
- Fry the pies in moderately hot oil, flipping once one side is set, until both sides are golden brown. This takes about 8-10 minutes, but the time may vary depending on the cookware and heat level.
- Once cooked, the pie should have a thin crust with a rich filling. The cooking wine excellently masks the gamey taste of pork, leaving only a delicious meaty flavor combined with chives, eggs, shrimp, and chicken juice.
