Instructions:
  1. Prepare the ingredients: soak the mushrooms in warm water. Prepare scallions, ginger, garlic, and chili peppers.
  2. Add water and chicken pieces to a pot, along with cooking wine, and bring to a boil over high heat.
  3. Skim off the foam and remove the chicken.
  4. Clean a heat-resistant clay pot, dry it, heat it, then add vegetable oil and sauté scallions, ginger, garlic, and chili peppers.
  5. Add the chicken pieces and stir-fry.
  6. Add boiling water, bring to a boil then simmer on low heat.
