Clay Pot Mushroom Chicken Soup
Ingredients:
- Half a chicken, cleaned and chopped
- 1 pack of assorted mushrooms for soup
- Appropriate amount of vegetable oil
- Appropriate amount of cooking wine
- Appropriate amount of water
- Scallions, ginger, garlic, and chili peppers, to taste
- Fresh coriander, to taste
- Chicken essence, to taste
Instructions:
- Prepare the ingredients: soak the mushrooms in warm water. Prepare scallions, ginger, garlic, and chili peppers.
- Add water and chicken pieces to a pot, along with cooking wine, and bring to a boil over high heat.
- Skim off the foam and remove the chicken.
- Clean a heat-resistant clay pot, dry it, heat it, then add vegetable oil and sauté scallions, ginger, garlic, and chili peppers.
- Add the chicken pieces and stir-fry.
- Add boiling water, bring to a boil then simmer on low heat.
- Place a steamer over the clay pot, add washed rice and water in a bowl inside it.
- Cover and let it steam over low heat for about an hour.
- Midway, add the mushrooms and continue simmering.
- After an hour, the steamed rice should be ready.
- Add goji berries, salt, and other seasonings.
- Add chicken essence.
- Finish with fresh scallions and coriander, mix well, and serve.
