Drunken Spiced Razor Clams

  • Razor Clams (毛蚶) - 700g
  • Selected Drunken Marinade Sauce (珍选醉卤捞汁) - 70ml
  • Oyster Sauce (蚝油) - 1/4 Spoon
  • White Vinegar (白醋) - 35ml
  • Mustard Oil (芥末油) - 5ml
  • Green Onion (香葱) - 1
  • Cilantro (香菜) - 1
  • Homemade Chili Oil (自制辣椒油) - 2 Spoons
Instructions:
  1. Soak the razor clams in salt water for over 30 minutes.
  2. Rinse and soak in clean water to remove sand.
  3. Boil in water with green onion leaves.
  4. Turn off the heat once the clams open.
  5. Remove and let cool.
  6. Extract the meat from the clams and mix with chopped green onions.
  7. Add the selected drunken marinade sauce.
  8. Mix well and wrap with cling film; chill in the fridge for 20 minutes.
