Vegetarian Dumplings with Chive and Egg Filling

Notes

Ingredients:
  • Chives: 300g
  • Eggs: 3
  • Soy Sauce: 1 tablespoon
  • Rice Vinegar: 2 tablespoons
  • Sesame Oil: 1 tablespoon
  • Cooking Oil: as needed
  • Salt: to taste
  • Dumpling Wrappers: as needed
  • Sugar: a pinch
Instructions:
  1. Prepare the ingredients.
  2. Wash and finely chop the chives, beat the eggs with a pinch of salt.
  3. Heat oil in a pan and scramble the eggs.
  4. Once cooked, turn off the heat and mash the eggs with a spatula.
  5. Mix chives with a little oil to lock in freshness and moisture.
  6. Add the scrambled eggs to the chives, season with salt.
  7. Begin assembling the dumplings.
  8. Place an appropriate amount of filling on each dumpling wrapper.
  9. Fold and seal the dumplings.
  10. Boil the dumplings in water until they float to the surface.
  11. Mix soy sauce, rice vinegar in a 1:2 ratio, and add a pinch of sugar for the dipping sauce.
  12. Add a little sesame oil to the sauce.
  13. Enjoy your vegetarian dumplings!
