Baked Tomato Norwegian Arctic Cod

Notes

Ingredients:
  • Norwegian Arctic Cod - 1 piece
  • Cherry Tomatoes - 8
  • Onion - 10g
  • Broccoli - 20g
  • Salt - a pinch
  • Olive Oil - 1 tablespoon
  • Pepper - to taste
Instructions:
  1. Halve the cherry tomatoes, saving two slices for later.
  2. Cut the broccoli into small pieces and wash thoroughly.
  3. Chop the onion into small pieces.
  4. Rinse the Norwegian Arctic Cod and pat dry with kitchen paper.
  5. Season with pepper and a little salt.
  6. Marinate in olive oil for 10 minutes.
  7. Blanch the broccoli in boiling salted water for 1 minute, then remove.
  8. Place the onion, broccoli, and cherry tomatoes in a baking dish, and mix with olive oil and pepper.
  9. Place the marinated cod on top.
  10. Add the reserved tomato slices on top of the cod.
  11. Bake in a preheated oven at 200°C for 20 minutes; adjust the temperature according to your oven.
  12. Remove from oven when done.
  13. Ready to serve.
