Braised Eel (Hong Shao Man Yu)

Notes

Ingredients:
  • 1 Eel
  • 1 head of Garlic
  • 2 tablespoons Cooking Oil
  • 3 tablespoons Cooking Wine
  • 1 tablespoon Light Soy Sauce
  • 3 slices Ginger
  • A pinch of Rock Sugar
  • A dash of Oyster Sauce
  • A dash of Seafood Sauce
  • A pinch of White Pepper Powder
Instructions:
  1. Clean the eel with cooking wine and hot water for 30 seconds to remove the black slime.
  2. Heat a little oil in a pan, as the eel will release its own fat.
  3. Add garlic and stir-fry until fragrant, then remove it.
  4. Cut the eel into 2 cm segments and fry in the oil until golden brown on both sides.
  5. Add cooking wine, soy sauce, ginger, and enough water to cover the eel. Boil and then simmer for 10 minutes.
  6. Add seafood sauce, oyster sauce, rock sugar, and garlic. Cook for another 10 minutes.
  7. When the sauce thickens, sprinkle with white pepper powder.
  8. Once done, transfer to a serving dish.
