Chicken Stir-Fry with Scallions

Notes

Ingredients:
  • 500g chicken thigh meat
  • 1 tsp salt
  • 1 tbsp cornstarch
  • 1/4 tsp black pepper powder
  • 1 tbsp cooking wine
  • 2 tbsp light soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp dark soy sauce
  • 1/2 tbsp sugar
  • 10g chopped scallions
  • 1 tbsp cooking oil
Instructions:
  1. Remove the skin from the chicken thighs and cut into small pieces.
  2. Marinate the chicken with 1 tbsp cooking wine, cornstarch, black pepper, and salt. Mix well and let it sit for 30 minutes.
  3. Mix together 2 tbsp light soy sauce, 1 tbsp oyster sauce, and 1/2 tbsp sugar. Set aside.
  4. Heat the oil in a pan and stir-fry the chicken pieces.
  5. Add the sauce mixture and cook on high heat until the sauce thickens.
  6. Sprinkle chopped scallions over the chicken.
  7. Cover and simmer for 1 minute.
  8. Enjoy the dish, perfect for both adults and kids, and surprisingly not greasy!
