Cold Chicken Gizzard Salad
Ingredients:
- Chicken Gizzards 500g
- Tai Tai Le Banquet Cooking Wine 2 tablespoons
- Ginger 2 slices
- Green Onion 2 segments
- Thai Chili Pepper 3 pieces
- Garlic 4 cloves
- Toasted Sesame Seeds 1 teaspoon
- Chen Vinegar 2 tablespoons
- Sugar ½ tablespoon
- Salt 1 teaspoon
- Tai Tai Le Chicken Essence 1 tablespoon
- Celery 2 stalks
- Onion ½
- Tai Tai Le Banquet White Boiling Sauce 2 tablespoons
- Sichuan Peppercorn Oil 1 tablespoon
Instructions:
- Wash the chicken gizzards and drain well.
- Slice the gizzards.
- Clean and chop the celery, green onions, and ginger.
- Boil water, add a few drops of cooking oil and a pinch of salt, then blanch the celery.
- Remove the celery once it changes color, and rinse under cold water. Drain and set aside.
- Add green onion segments, ginger slices, and Tai Tai Le Banquet Cooking Wine to the boiling water.
- Once the water boils again, add the chicken gizzard slices. When they change color completely, remove, rinse under cold water, and drain.
- Place the chicken gizzards and celery in a bowl.
- Slice the onion, cut the chili peppers, and mince the garlic.
- Mix all ingredients together, sequentially adding salt, sugar, Chen vinegar, Sichuan peppercorn oil, toasted sesame seeds, and Tai Tai Le Banquet White Boiling Sauce.
- Finally, add Tai Tai Le Chicken Essence and mix well. Serve on a plate.
