Eggplant Rolls: A Tasty and Easy Recipe

Ingredients:
  • Purple eggplants, 2 pcs
  • Minced pork, 40g
  • Minced scallions, ginger, and garlic, 10g
  • 1 egg
  • Salt, 5g
  • Half a spoon of pepper powder
  • Soy sauce, 1 spoon
  • Oyster sauce, 1 spoon
  • Crispy meat powder, 50g
  • Appropriate amount of cooking oil
Instructions:
  1. Wash the eggplants and slice them thinly.
  2. Mix the minced pork with scallions, ginger, and garlic.
  3. Add soy sauce, oyster sauce, a little salt, pepper powder, and an egg to the pork mixture and blend well.
  4. Spread the pork mixture along the grain of the eggplant slices and roll them up.
  5. Mix crispy meat powder with a little cooking oil and coat the eggplant rolls.
  6. Fry the eggplant rolls for several minutes until both sides are golden brown.
  7. Once fried, optionally add oil-vinegar sauce or tomato sauce as per taste. Enjoy!
