Grapefruit and Passion Fruit Honey Jam

Ingredients:
  • 1 Grapefruit
  • 2 Passion Fruits
  • 300 ml Honey
  • 300 g Rock Sugar
Instructions:
  1. Separate the grapefruit peel and flesh. Thinly slice the peel and remove the white pith. Soak the peel in saltwater for half an hour.
  2. In a large pot, combine the grapefruit flesh, rock sugar, and passion fruit pulp. Add water to cover and simmer over medium heat. In another pot, boil the grapefruit peel with water and a spoonful of salt (about 10 grams), then rinse twice with cold water to remove bitterness. Add the peel to the large pot.
  3. Simmer the mixture in the pot over medium heat without a lid.
  4. When the mixture reaches a jam-like consistency, stir constantly to prevent burning. Reduce the heat, add honey, and mix thoroughly. Turn off the heat once fully combined.
  5. The jam can be served directly, used as a spread for sandwiches, mixed with fruits, or used to make fruit tea.
  6. The jam pairs well with tea bags for a comforting beverage, with no additional ingredients needed.
