Ground Meat and Eggplant Rice

Notes

Ingredients:
  • 1 Eggplant
  • 100g Ground Meat
  • 1 Tomato
  • Appropriate amount of Green Onions and Garlic
  • 2 tablespoons Soybean Paste
  • 2 tablespoons Light Soy Sauce
  • 1 tablespoon Dark Soy Sauce
  • 3 cups Rice
Instructions:
  1. Wash and dice the eggplant.
  2. Prepare the ground meat (add a bit of oil if needed).
  3. Finely chop green onions and garlic.
  4. Blanch the tomato in hot water to peel it easily.
  5. Dice the peeled tomato.
  6. Sauté the green onions and garlic until fragrant.
  7. Add the ground meat and stir-fry.
  8. Stir in the soybean paste.
  9. Add light and dark soy sauce, stirring evenly.
  10. Put in the diced eggplant and tomato.
  11. Stir-fry all ingredients until well mixed.
  12. Transfer the mixture to a rice cooker with the rice.
  13. Add slightly less water than usual for rice cooking, and cook.
  14. Once cooked, serve and enjoy!
