Homemade Braised Eel
Ingredients:
- Eel, 350g
- Fresh ginger, a small piece
- Garlic, 2 cloves
- Green and red chili peppers, to taste
- Salt, to taste
- Shaoxing wine (料酒), to taste
- Light soy sauce (生抽), to taste
- Chicken essence (鸡汁), to taste
Instructions:
- Heat oil and fry the eel until both sides are golden brown.
- Add chopped chilies, ginger, garlic, and salt, and continue frying.
- Add Shaoxing wine to remove the fishy smell and simmer for a while.
- Add water and stew the eel.
- Add chicken essence to enhance the flavor and cook until the sauce thickens.
- Add green peppers and cook until they are just done.
