Homemade Braised Eel

Notes

Ingredients:
  • Eel, 350g
  • Fresh ginger, a small piece
  • Garlic, 2 cloves
  • Green and red chili peppers, to taste
  • Salt, to taste
  • Shaoxing wine (料酒), to taste
  • Light soy sauce (生抽), to taste
  • Chicken essence (鸡汁), to taste
Instructions:
  1. Heat oil and fry the eel until both sides are golden brown.
  2. Add chopped chilies, ginger, garlic, and salt, and continue frying.
  3. Add Shaoxing wine to remove the fishy smell and simmer for a while.
  4. Add water and stew the eel.
  5. Add chicken essence to enhance the flavor and cook until the sauce thickens.
  6. Add green peppers and cook until they are just done.
