Pork and Shiitake Mushroom Dumplings

Notes

Ingredients:
  • 500g Pork Mince
  • 15 Dried Shiitake Mushrooms
  • 2 Green Onions
  • 1 Egg
  • Dumpling Wrappers, as needed
  • 2 Star Anise
  • A Pinch of Sichuan Peppercorns
  • 2 Segments of Green Onion
  • 4 Slices of Ginger
  • 1 tbsp Premium Soy Sauce
  • 1 tbsp Oyster Sauce
  • 1 tsp Seasoning Oil (or Sesame Oil)
  • ½ tsp Salt
  • ½ tsp Ground Black Pepper
Instructions:
  1. Prepare the ingredients: Soak ginger slices, green onion segments, star anise, and Sichuan peppercorns in hot water for 30 minutes. Rehydrate dried shiitake mushrooms.
  2. Finely chop the green onions and rehydrated shiitake mushrooms.
  3. Filter the soaked ginger and onion water and add it to the pork mince in three batches, stirring clockwise until well mixed.
  4. To the pork mince, add 1 tbsp premium soy sauce, 1 tbsp oyster sauce, ½ tsp salt, ½ tsp black pepper, and 1 tsp seasoning oil, mixing well.
  5. Stir in the chopped shiitake mushrooms until evenly distributed.
  6. Add the chopped green onions and pour hot oil over them to release the fragrance.
  7. Incorporate 1 beaten egg into the mixture.
  8. Fill the dumpling wrappers with the prepared filling and seal them.
  9. Optionally, prepare extra dumplings to freeze for later use.
  10. Boil the dumplings until cooked, then remove and drain.
  11. Serve with garlic vinegar sauce and enjoy!
