Pork Stew with Potato Noodles

Notes

Ingredients:
  • 500g Pork Belly
  • 250g Potato Noodles
  • Appropriate amount of Green Onions and Ginger
  • 1 Star Anise
  • 1 Piece of Cinnamon
  • Sugar to taste
  • Soy Sauce to taste
  • Dark Soy Sauce to taste
  • Cooking Wine to taste
  • 3 sprigs of Coriander
Instructions:
  1. Pre-soak the potato noodles in advance.
  2. Cut the pork belly into thick slices and fry in oil until golden brown on both sides.
  3. Add green onions, ginger, star anise, and cinnamon; stir-fry until fragrant.
  4. Add soy sauce and burst the fragrance, then add cooking wine to remove any gaminess. Pour in enough boiling water, bring to a boil on high heat, then simmer for 30 minutes on low heat.
  5. After 30 minutes, use dark soy sauce, soy sauce, and sugar for seasoning. Add the pre-soaked potato noodles and continue to simmer on low heat.
  6. Cook until the sauce thickens and the potato noodles become soft. Remove from heat.
  7. Garnish with coriander and serve hot, especially comforting on a snowy day.
