Scallion and Bacon Scones

Notes

Ingredients:
  • 200g All-Purpose Flour
  • 15g Granulated Sugar
  • 3g Salt
  • 5g Baking Powder
  • 50g Butter (cold, unsalted)
  • 40g Egg Liquid
  • 65g Light Cream
  • 100g Bacon (chopped)
  • 10g Scallions (chopped)
Instructions:
  1. Gather all ingredients. The butter does not need to be softened.
  2. Sift together flour and baking powder into a large bowl.
  3. Add sugar, salt, and cold butter to the flour mixture.
  4. Mix by hand until the butter is blended and the mixture resembles moist crumbs.
  5. Combine egg liquid and light cream, then pour into the flour mixture.
  6. Mix until evenly combined.
  7. Add the chopped bacon and scallions.
  8. Fold and press the mixture until it forms a dough. Do not over-knead to prevent gluten development.
  9. Divide the dough into two rounds.
  10. Cut each round into 6 pieces.
  11. Place the pieces on a baking tray.
  12. Brush with remaining egg liquid.
  13. Bake in a preheated oven at 180°C (356°F) for 25 minutes, or until golden brown.
  14. Enjoy warm, with a crisp exterior and soft interior.
