Steamed Crab with Eggs

Notes

Ingredients:
  • 1 large crab
  • 3 eggs
  • 1 green onion
  • Salt, to taste
  • A dash of sesame oil
  • Appropriate amount of premium raw pickling sauce
Instructions:
  1. Beat 3 eggs in a bowl, add salt, and mix to create an egg mixture.
  2. Add twice the amount of warm water to the egg mixture and stir well.
  3. Remove the foam with a spoon. If available, use a strainer for a smoother egg consistency.
  4. Add a dash of sesame oil to the mixture and remove any remaining foam.
  5. Cover with plastic wrap and puncture a few holes with a toothpick, then steam.
  6. Meanwhile, thoroughly clean the crab with a brush.
  7. Steam the crab until it turns red.
  8. When the egg mixture begins to set, add the crab and continue steaming until the eggs are fully set.
  9. Wash and finely chop the green onion.
  10. Sprinkle the chopped green onion over the crab and egg mixture.
  11. Drizzle an appropriate amount of premium raw pickling sauce over the top.
  12. Serve, noting that while the presentation may be simple, the flavor is exceptional.
