Stir-Fried Beef with Green Peppers
Ingredients:
- Beef (suitable amount)
- 2 Green Peppers
- 1 tablespoon Cooking Wine (e.g., Shaoxing wine)
- Suitable amount of Light Soy Sauce
- 1 teaspoon Oyster Sauce
- A little Egg White
- A pinch of Salt
- 2 grams Baking Soda
- 3 slices of Ginger
Instructions:
- Cut the beef into strips. Marinate with salt, baking soda, cooking wine, ginger slices, egg white, and a little oil. Set aside for a while.
- Cut the green peppers into chunks or strips.
- Heat oil in a wok, stir-fry the green peppers until they are half cooked, then add the marinated beef.
- Cook until the beef is done, add light soy sauce and oyster sauce, and stir-fry until everything is evenly coated.
- Tip: Adding baking soda tenderizes the beef (neutralizes acidity), and a bit of oil helps to seal in moisture.
