Stir-Fried Beef with Green Peppers

Notes

Ingredients:
  • Beef (suitable amount)
  • 2 Green Peppers
  • 1 tablespoon Cooking Wine (e.g., Shaoxing wine)
  • Suitable amount of Light Soy Sauce
  • 1 teaspoon Oyster Sauce
  • A little Egg White
  • A pinch of Salt
  • 2 grams Baking Soda
  • 3 slices of Ginger
Instructions:
  1. Cut the beef into strips. Marinate with salt, baking soda, cooking wine, ginger slices, egg white, and a little oil. Set aside for a while.
  2. Cut the green peppers into chunks or strips.
  3. Heat oil in a wok, stir-fry the green peppers until they are half cooked, then add the marinated beef.
  4. Cook until the beef is done, add light soy sauce and oyster sauce, and stir-fry until everything is evenly coated.
  5. Tip: Adding baking soda tenderizes the beef (neutralizes acidity), and a bit of oil helps to seal in moisture.
