Stir-Fried Shepherd's Purse
Ingredients:
- Shepherd's purse (儿菜), 300g
- Salt, 2g
- Monosodium glutamate (MSG), 1g
- Dried chili pepper, a suitable amount
- Sichuan peppercorns, about 10 grains
- Vegetable oil, as needed
Instructions:
- Thoroughly clean the shepherd's purse.
- Cut into slices and marinate with 2g of salt for 10 minutes, then squeeze out excess water.
- Prepare dried chili pepper and Sichuan peppercorns.
- Heat vegetable oil in a pan, and fry the dried chili and Sichuan peppercorns until fragrant.
- Add the shepherd's purse and stir-fry evenly for about half a minute.
- Add MSG and stir well.
- Stir until well mixed and then remove from heat.
