Stir-Fried Shepherd's Purse

Notes

Ingredients:
  • Shepherd's purse (儿菜), 300g
  • Salt, 2g
  • Monosodium glutamate (MSG), 1g
  • Dried chili pepper, a suitable amount
  • Sichuan peppercorns, about 10 grains
  • Vegetable oil, as needed
Instructions:
  1. Thoroughly clean the shepherd's purse.
  2. Cut into slices and marinate with 2g of salt for 10 minutes, then squeeze out excess water.
  3. Prepare dried chili pepper and Sichuan peppercorns.
  4. Heat vegetable oil in a pan, and fry the dried chili and Sichuan peppercorns until fragrant.
  5. Add the shepherd's purse and stir-fry evenly for about half a minute.
  6. Add MSG and stir well.
  7. Stir until well mixed and then remove from heat.
