Sweet and Sour Fish Cubes
Ingredients:
- Norwegian Arctic Cod: 2 pieces
- Ginger: 3 slices
- Tomato Sauce: 2 tablespoons
- Salt: a pinch
- Sugar: 2 tablespoons
- White Vinegar: 2 tablespoons
- Spicy Cucumber Puree: 1 tablespoon
- MSG: as needed
- Garlic: 1 clove
- Spring Onion: 1 segment
- Glutinous Rice Flour: as needed
- Wheat Flour: as needed
- Cornstarch: as needed
- White Sesame Seeds: a little
- Egg: 1
Instructions:
- Prepare all ingredients.
- Marinate the cod cubes with a little salt and MSG for 15 minutes.
- Fine chop ginger, garlic, and spring onion.
- Dry the cod pieces thoroughly.
- Coat the fish with a flour mixture (glutinous rice flour, wheat flour, cornstarch in a 3:2:1 ratio).
- Dip in beaten egg.
- Coat again with the flour mixture.
- Fry in oil heated to about 70% hot until golden brown.
- For the sauce: combine vinegar, sugar, tomato sauce, and spicy cucumber puree; cook until thick. Add ginger, garlic, and spring onion.
- Sprinkle with a little white sesame seeds.
- Coat the fried fish with the sauce and serve immediately.
