Tomato Braised Eggplant

Notes

Ingredients:
  • 2 Eggplants
  • 2-3 Tomatoes
  • 10g Chopped Green Onions
Instructions:
  1. Peel the eggplants and cut them into small pieces.
  2. Heat oil in a pan and fry the eggplant pieces until they change color, then remove from the pan.
  3. Sauté chopped green onions until fragrant, then add tomato pieces and cook until they release their juice.
  4. Add the fried eggplant back into the pan, stir well, and cook until everything is well combined.
