Tomato Braised Eggplant
Ingredients:
- 2 Eggplants
- 2-3 Tomatoes
- 10g Chopped Green Onions
Instructions:
- Peel the eggplants and cut them into small pieces.
- Heat oil in a pan and fry the eggplant pieces until they change color, then remove from the pan.
- Sauté chopped green onions until fragrant, then add tomato pieces and cook until they release their juice.
- Add the fried eggplant back into the pan, stir well, and cook until everything is well combined.
