Chickpea Puree with Pan-Seared Norwegian Arctic Cod

Notes

Ingredients:
  • 1 piece Norwegian Arctic Cod
  • Sea salt, to taste
  • Black pepper, to taste
  • 60g ready-to-eat chickpeas
  • A few sprigs of cilantro (coriander)
  • Olive oil, as needed
  • 1/2 lemon
  • 1/4 avocado
Instructions:
  1. Prepare all the ingredients.
  2. Marinate the cod with black pepper and sea salt, then coat lightly with olive oil.
  3. Heat olive oil in a pan and sear each side of the cod for approximately 2 minutes.
  4. Squeeze the juice from the lemon.
  5. Combine chickpeas, lemon juice, and cilantro in a food processor and blend until smooth.
  6. Add avocado and an equal amount of water to the mixture, and blend again until smooth.
  7. Spread the chickpea puree onto a plate.
  8. Place the cod on the plate and garnish with chopped parsley if desired.
