Egg Stir-Fried Vermicelli
Ingredients:
- 3 eggs
- Handmade fine vermicelli, as needed
- Zhen Xian Mapo Tofu seasoning, as needed
- Green onions, ginger, garlic, to taste
- Small amount of chili pepper
- 2 tablespoons light soy sauce
- 1 tablespoon dark soy sauce
- A handful of chives
- 1 tablespoon sesame oil
Instructions:
- Heat oil in a pan, pour in the eggs and scramble until just set. Remove and set aside.
- In a separate pan, sauté green onions, garlic, and chili pepper.
- Add a small packet of Zhen Xian Mapo Tofu seasoning and fry until the oil turns red.
- Add enough water, light soy sauce, and dark soy sauce for coloring.
- Add the handmade fine vermicelli.
- Cook for two minutes, then add the chives and scrambled eggs.
- Stir-fry until well mixed and drizzle with a little sesame oil before serving.
