Instructions:
- Prepare the purple sweet potato mash in advance.
- Mix the mashed purple sweet potato with granulated sugar and milk.
- Add grated mozzarella cheese and sesame seeds to the mixture.
- Spread the mixture onto the hand-grabbed pancakes.
- Beat an egg and brush it over the top.
- Place in an air fryer, being careful to monitor the cooking time as it may vary depending on the fryer.
- Flip over and continue to cook until both sides are golden and crispy.
- Remove from the air fryer and serve hot.
