It’s an easy recipe to make using oil instead of butter which makes it super moist and spongy. Preheat the oven to 350°F. Prepare three 8-inch round baking pans, line the bottom with parchment paper and grease the sides. Prepare with bake even strips if desired. In a large mixing bowl, combine the sugar, vegetable oil, eggs and vanilla extract.

Frost or glaze the cake as desired. If you want to make a glaze just mix a little over 1 cup of powder sugar, ½ teaspoon vanilla extract, & a couple tablespoons of milk together in a bowl until you have a thin glaze, using a spoon drizzle or pour over the top of cake.
