I guess there is no German who doesn’t know the German Hazelnut Cake! It is famously sold as a cake mix in Germany and it comes with a delicious hazelnut glaze. And that’s where for many people the struggle begins: Nobody knows how to make that hazelnut glaze from scratch!
An East German chocolate frosted cake favorite, bristling with almonds to look like a wild deer hide. A lemon cake with a filling of whipped cream, tangerines and coconuts makes a perfect summertime cake.
Traditionally the cake is baked in a Bundt or a kugelhupf pan but you can also use a tube pan, just bake it for a shorter time as needed. Germans really love their streusel — and by streusel we don’t mean itsy bitsy crumbles but large, chunky, crunchy streusel!
Preheat oven to 350°F. Mix together the sugar, eggs and flavouring and set aside. In another bowl, cream the butter and gradually add it to the sugar mixture. Mix the flour, baking powder and ground nuts together. Add it to the sugar and butter mixture a spoonful at a time.
