This apple oatmeal snack cake makes a great breakfast or afternoon snack. It’s an easy cake recipe packed full of oatmeal, apples and nuts. Preheat the oven to 350F. Line an 11×7 inch baking pan with parchment paper and set aside. In a large bowl cream the butter and brown sugar until light and fluffy. Add the eggs and vanilla and beat well.
Combine flour, oats, baking powder and salt. In separate bowl, beat white sugar and butter until blended. Whisk in cinnamon applesauce, egg, and vanilla. Add flour mixture to applesauce mixture and stir until well blended. In small bowl, combine chunky applesauce, raisins, brown sugar, and cinnamon.
Directions. Mix well, and cool. In a large bowl, combine butter or margarine, 1 cup brown sugar, 1 cup white sugar, eggs, flour, baking soda, spices, and salt. Add cooled oatmeal mixture, and stir to combine. Pour batter into pan. Bake for 35 minutes.
