Heat enough oil for deep frying and place frying ladle into the hot oil for a while. In a large bowl sift plain flour, self raising flour, rice flour and baking powder together then add in seasoning and water, mix well.
Whisk together the flour, cornmeal, salt and pepper together in a separate casserole dish. Add the oysters to the buttermilk and let soak. Then remove, letting the excess drip off, and dredge through the cornmeal mixture, tapping off the excess. Fry in the hot oil in batches, until golden and crisp, about 2 minutes.
When the egg is nearly cooked, dig a well in the center of the egg. Add 2 Tbsp of oil, chopped garlic and chopped chilli or chilli paste into the well and fry for a short while. Next add in the oysters, spring onion and pour in remaining egg mixture over the oysters.
