In a mixing bowl, mix together butter and sugar. Add egg yolks, salt and lime juice. To the above mixture add alternately flour and egg whites and mix using an electric hand mixer. Chop jackfruit into fine pieces and add to the above batter.

Sift in the flour, baking powder, baking soda and salt into the beaten mixture. Pour the jackfruit pulp and fold in the mixture till all moist.
Fold in the chopped jackfruit and cashew nuts. Pour the batter into the prepared pan and bake for 30-40 minutes till skewer comes out clean. Allow to cool in pan for five minutes and then flip onto a cooling rack till completely cooled.
