A moist and dense mint-flavored buttermilk cake, with vanilla buttercream frosting. In a small bowl, combine sour cream, buttermilk, milk, and eggs. In large mixing bowl, place cake mix, shortening, and half of the sour cream mixture. Mix well. Add remaining sour cream mixture, and mix well. Add mint extract and food coloring.
For the buttercream, mix together icing sugar, butter, cocoa powder, milk and peppermint extract. Place the first sponge onto your cake stand, cake board or plate and pipe or spread some buttercream on top of it. Add the second sponge on top, and smooth more buttercream around the sides of the whole cake in a thin layer.
