Eggplant and Green Bean Stir-Fry Recipe

Notes

Ingredients:
  • Eggplant, 1 medium-sized
  • Green beans, 50g
  • Carrot, 1/3 of a medium-sized carrot
Instructions:
  1. Prepare the vegetables: Wash and cut the eggplant into bite-sized pieces. Trim the green beans and cut them into similar lengths. Peel and slice the carrot thinly.
  2. Heat oil in a pan over medium heat. Add the carrots and stir-fry until slightly tender.
  3. Add the eggplant and green beans to the pan. Stir-fry until the vegetables are tender and slightly browned.
