A Quick & Easy Coffee Cake that is delicious and heartwarming. Preheat oven to 350, grease cake pan. In a large bowl add eggs, oil, milk, vanilla extract and beat until well combined. In another bowl add flour, sugar, baking soda, salt and mix very well. Add the dry mixture to the wet mixture and mix until well combined. Set bowl aside.
In a large bowl, combine 2 cups flour, 3/4 cup sugar, baking powder and salt. Cut in 1/2 cup butter until mixture resembles coarse crumbs. Crack an egg into a measuring cup and then fill add milk to make 1 cup. Stir in vanilla. Pour into crumb mixture and mix just until moistened.
Stir 1 tablespoon softened butter and white sugar together in a coffee mug until fluffy; stir egg, sour cream, and vanilla extract into the butter mixture. Mix 2 tablespoons flour, brown sugar, and cinnamon together in a bowl. Cook in microwave oven on high for 1 minute.
You can bake this coffee cake in a 9” cake pan or a 8” square baking pan but bake time will be shorter. Using a springform pan will make unmolding the cake easier. But be sure to place the springform pan on a baking sheet when baking since the springform pan may leak a little bit.
