Watermelon Cake: Cut a thick 3-inch slice from the center of the melon (to look like a big cake layer). Trim the rind from the slice. Place on a platter. Remove strawberry greens, then thinly slice the fruit. Overlap slices around the base of the watermelon. Whip the cream and sugar to stiff peaks.
Place the watermelon on the work surface. Cut its ends off and skin it. Submerge it into the spiced water and marinate it for 3 hours. Remove it from the box and pat it with a kitchen towel. Line a baking tray with parchment paper and place the marinated watermelon on it.
