Sesame Mantou (Chinese Steamed Buns)

Notes

Ingredients:
  • 500g all-purpose flour
  • 5g dry yeast
  • 80g sugar (optional)
  • 30-50g black sesame seeds, ground
  • 270g milk or water, adjust as needed
Instructions:
  1. Prepare the ingredients. Grind the sesame seeds roughly. Sugar is optional. Dissolve yeast in milk or water until there are no lumps.
  2. Mix the ground sesame seeds and sugar (if using) into the flour. Gradually add the milk or water, stirring continuously until the mixture forms lumps.
  3. After mixing into a dough, cover and let it rest for 10 minutes to absorb moisture better, making it easier to knead.
  4. Knead the dough until smooth. If using a dough press, knead until there are no air pockets inside. (Kneading is similar to washing clothes: keep folding and pressing the dough.)
  5. After kneading, flatten the dough, roll it up, cut it into pieces, and place them in a steamer. Let them rise at room temperature until they slowly spring back when pressed.
  6. Once risen, start with cold water and steam for 18 minutes. After turning off the heat, let them sit for an additional 3 minutes.
  7. Your Sesame Mantou is now ready to enjoy!
