Braised Yellow Croaker (红烧黄花鱼)

Notes

Ingredients:
  • 1 Yellow Croaker
  • 5 slices Ginger
  • 2 cloves Garlic
  • 1 segment Green Onion (white part)
  • 1 Dry Chili Pepper
  • 10 Sichuan Peppercorns
  • 1 tablespoon Soy Sauce
  • 1/2 tablespoon Vinegar
  • 1 tablespoon Oyster Sauce
  • 1 tablespoon Sugar
  • 2 grams Salt
Instructions:
  1. Clean the yellow croaker thoroughly, rinsing several times.
  2. Heat a pan over low heat, add a little cooking oil, and lightly fry the fish on both sides until set.
  3. Add garlic, ginger, green onion, Sichuan peppercorns, and dry chili pepper to the pan, frying until fragrant. (Fry on the side of the pan to avoid breaking the fish).
  4. Add hot water to just cover the fish. Stir in soy sauce, oyster sauce, vinegar, sugar, and salt. Spoon the sauce over the fish, cover, and simmer on medium-low heat for about 10 minutes.
  5. Finally, reduce the sauce until thick and serve the fish garnished with green onion strips.
  6. Enjoy your savory and slightly spicy braised yellow croaker!
