From classic profiterole (cream puffs) using pâte à choux to dipper éclairs and many pastries that use layered, buttery dough (for croissants), there is no shortage of sweet treats to create! Luckily for you, there are many great French pastry recipes that aren’t overly difficult to create even though they look super fancy.
The cake filling is fresh strawberries and a thick stove top custard, also a French recipe. The icing is beaten heavy whipping cream. I don’t add sugar, but you may add confectioners sugar as you beat the cream.
Using the electric whisk, beat the eggs and the sugar for 5 minutes. The mix should swell twice its size. Sift the flour on the eggs, and gently stir to combine. Put in the greased cake tin, and bake 20 minutes at 350°F (180°C). Leave to cool down. Pour the water and the sugar in a pot and bring to a boil.
Simply nestle it in the almond cream. Place second puff pastry disc on top of filling, and crimp edges with a fork to seal cake. Using a sharp knife, score a decorative pattern into top layer of pastry without cutting through to almond filling. Brush galette with beaten egg (this will create a golden crust).
