With a simple swap from conventional flour to our Gluten-Free Measure for Measure Flour, King Arthur favorites like Lemon Bliss Cake and Red Velvet Cake have been given the gluten-free makeover you’ve been waiting for. These gluten-free versions are just as tender, flavorful, and full-of-love as ever!
I don’t recommend mixing your own flours to make a gluten-free king cake. The frosting for a gluten-free king cake is made by combining powdered sugar, milk, and vanilla for flavoring. The consistency is runny and easy to spread over the top of the king cake. On top of the frosting, you’ll want to sprinkle colored sugar or sprinkles.
This recipe uses King Arthur Unbleached Cake Flour Blend, which results in a high rising cake with a moist, tender crumb. The cake also uses the paste method, so no need to cream the butter and sugar. We do recommend a stand mixer for this cake, or a sturdy hand mixer.
Gluten free white cake recipe may also be baked in a 9X13 inch pan to make a sheet cake. If you plan on removing the cake from the pan to decorate, line the bottom with parchment paper cut to size. Grease the top of the parchment with cooking spray. Bake at the same temperature as the layer cake directions.
