This cake is the one Olivia Walton made in the movie “The Homecoming”, which was the basis for the TV series “The Walton’s” and mentioned in several of the television episodes as John-Boys favorite cake. Today I’m sharing a recipe for a delicious cake! Not just any cake, but Olivia Walton’s Applesauce Cake!
Alternately add flour mixture and applesauce, beginning and ending with the flour. Stir in raisin mixture. Spoon into greased 10-inch tube or bundt pan. Bake in preheated 350 degree oven for 1 hour and 20 minutes (or until cake tester inserted in center comes out clean).
Combine nuts and raisins in bowl and stir in 1/2 cup of the flour mixture. Cream butter in another bowl until light and fluffy. Beat in eggs one at a time, beating thoroughly after each. Alternately add flour mixture and applesauce, beginning and ending with the flour.
The exact origin of applesauce cake is unknown, though some speculate it developed during the time of the first World War when sugar was scarce, and it was “patriotic” to use less of it, along with less butter and fewer eggs (this recipe only uses two). Health-conscious folks like the idea of substituting applesauce for some of the shortening.
