A decadent and creamy vanilla cake that is AIP and Paleo! Preheat the oven to 350 degrees and grease a 7 or 8 inch spring form cake pan with coconut oil and line it with parchment paper. In a large bowl, combine all of the liquid ingredients. Slowly whisk the dry ingredients into the wet ingredients until thoroughly mixed and a batter has formed.
AIP Chocolate Cake. Ingredients: plantain, banana, avocado, coconut oil, honey, carob powder, apple cider vinegar, baking soda, cream of tartar, water, (optional garnishes): coconut cream, coconut flakes, or fruit.
Swap out the chocolate for carob to keep this AIP-friendly. Ingredients: seedless watermelon, full-fat coconut milk, vanilla extract, raw honey, shredded coconut, fresh fruit. Watermelon Cake is a great idea to serve at a summer birthday or celebration as it is light and fruity, yet packed with goodness.
This AIP Chocolate Cake aka Skeleton Cake uses carob for it’s chocolate-ly flavor and coconut milk gummies for the spooky bones. While this is a fantastic Paleo Halloween treat, this AIP cake would make a great birthday cake minus the bones!
