Ji Cai Hun Tun (Shepherd's Purse Wontons) Recipe

Notes

Ingredients:
  • Fresh Pork: 500 grams
  • Shepherd's Purse (Ji Cai): 300 grams
  • Green Vegetables: a small amount
  • Wonton Wrappers: worth 10 yuan
  • Ginger: 2 slices
  • Salt: to taste
  • Cooking Oil: as needed
  • Cooking Wine: 1 spoon
  • Sugar: a pinch
  • Eggs: 2
Instructions:
  1. Chop the pork into mince and sprinkle with salt. Set aside.
  2. Blanch shepherd's purse and green vegetables in boiling water until they change color, then remove.
  3. Rinse with cold water and squeeze out excess water.
  4. Chop the blanched vegetables finely.
  5. Add salt, sugar, sesame oil, and eggs to the chopped vegetables.
  6. Mix well.
  7. Add the minced pork to the vegetable mixture. You may add more pork as desired.
  8. Begin wrapping the wontons.
  9. Roll the filling in the wonton wrappers.
  10. Moisten the edges with water and pinch to seal.
  11. Once the water is boiling, add the wontons and cook until they float to the surface.
