Purple Sweet Potato Twist Pastries

Notes

Ingredients:
  • Pancake (ready-made) - as needed
  • Purple sweet potato - 200g
  • Milk - 50g
  • Fine sugar - 20g
  • Egg yolk - as needed for glaze
  • Black sesame seeds - as needed
Instructions:
  1. Prepare all ingredients.
  2. Peel and chop the purple sweet potato into small pieces, then steam for 15 minutes.
  3. Once cooked, add milk and fine sugar to the sweet potato.
  4. Mash the mixture into a smooth purple sweet potato paste.
  5. Spread the paste evenly over a sheet of thawed pancake.
  6. Cover with another pancake sheet.
  7. Cut into evenly sized strips.
  8. Fold and twist each strip into a spiral shape.
  9. Brush with egg yolk and sprinkle black sesame seeds on top.
  10. Bake in a preheated oven at 180°C for about 12-15 minutes until golden brown. (For air fryer, bake at 170°C for 8-10 minutes.)
  11. To store, keep in an airtight container in the fridge for up to 3 days. Reheat in an oven or microwave before serving.
