Suancai Pork Noodles

Notes

Ingredients:
  • Pork (lean) - 400g
  • Garlic - 3 cloves
  • Red Chili - 1
  • Fresh Noodles - as needed
  • Suancai (Chinese Sauerkraut) - 500g
  • Salt - to taste
  • White Pepper Powder - as needed
  • Oyster Sauce - to taste
  • Light Soy Sauce - to taste
  • Cornstarch - as needed
  • Spring Onion - for garnish
  • White Sugar - a small spoonful
  • Vinegar - a small amount
  • Chicken Powder - 1 teaspoon
  • Water - as needed
Instructions:
  1. Cut the pork into strips and marinate with salt, white pepper powder, oyster sauce, light soy sauce, and cornstarch. Mix well and let it sit for 15 minutes.
  2. Heat oil in a pan, stir-fry the pork strips until they change color. Add spring onions and chili strips, followed by suancai.
  3. Add a spoonful of white pepper powder, a small spoon of salt, a small handful of white sugar, a spoonful of light soy sauce, a little water, a little vinegar, and a teaspoon of chicken powder. Stew for 5 minutes.
  4. Cook the noodles and greens separately. Pour the prepared pork and suancai sauce over the noodles.
  5. Serve hot and enjoy!
